Peanut Butter Oatmeal Balls

I love creating wholesome, yummy fuel-food to eat after a long ride. These energy bites host one of my favourite ingredients…peanut butter! Although thought of as an indulgent food (which it can be if you eat it out of the jar with a spoon….guilty of that) peanut butter provides an excellent source of protein and is packed with nutrients such as vitamin E, magnesium, potassium, fibre and healthy fats.

This simple recipe combines creamy peanut butter, gooey medjool dates and raw oats to make a delicious and nutritious snack. They take only minutes to make, so perfect to whip up for a grab-and-go snack option after an intense workout. Feel free to play around with other nut or seed butters to suit your taste buds.


2 cups of soft medjool pitted dates

2 cups rolled oats

1 cup smooth peanut butter (can use nut or seed butter)

2 tsp vanilla extract

3-5 tbsp of water


1. Process medjool dates in a food processor until sticky and creamy consistency is formed. Add oats, peanut butter and vanilla and process until well combined. Add water to help everything stick together.

2. Time to get down and dirty. Use your hands to form the dough into balls. Place into a sealed air tight container and refrigerate.

3. Eat!
