It’s the depth of flavour that makes this mouth watering pasta dish a comforting meal after any hard session. The ‘new age twist’ on traditional bolognese makes this a winning dish. Deliciously rich and high in protein and carbohydrates it’s a classic the entire family will love. Served on a Sunday afternoon with a bottle of red and toasted garlic bread….you’ll be the winner at any table!


500g beef mince

500g thick tube spaghetti

2 cans of diced tomatoes

2 onions diced

4 teaspoons of garlic paste

1 teaspoon of ginger (optional, but recommended)

2 teaspoons coriander powder

1 teaspoon turmeric

1 teaspoon salt

1 teaspoon red chilli powder

Juice of 2 limes

4 heaped tablespoons tomato paste

Shaved parmesan cheese

Sea salt & cracked pepper


Place onions into the pan and lightly heat through until translucent. Add garlic, ginger, herbs and spices. Stir for 1 minute to bring out the aromatic flavour. Add the heaped tomato paste and mix for a further 2 minutes. Add mince and stir to coat with spices. Cook for another 4 minutes (about 60% cooked through) then add the 2 cans of diced tomatoes. Cook for at least 20 minutes until sauce thickens and excess liquid evaporates.

While the sauce is simmering cook pasta, drain and top with rich bolognese sauce. Get heavy handed with shaved extra sharp parmesan cheese, sea salt and cracked pepper to dress. Wash down with a glass of smooth red wine. Bon appetite.
