Mum’s Granola Recipe.
This recipe is the best granola recipe for anyone wanting to eat wholesome, real honest food. A nutritious breakfast for post training recovery. Full of fibre, iron, magnesium, protein, zinc and packed with taste. After a hard morning cycling, sit down to a hot coffee and this golden granola served with yummy Greek yoghurt, Manuka honey and fruit.
Ingredients
2 cups puffed rice
1/2 cup pumpkin seeds
2/3 cup Brazil nuts
2/3 cup almonds
2/3 cup walnuts
3 tbs chia seeds
1 cup coconut flakes
1 cup prunes
4 tsp ground cinnamon
4 tbs coconut oil
3 tbs rice malt syrup
Method
Preheat oven to 165 degrees
Chop all nuts and prunes (use a food processor if you have one)
Put all dry ingredients into a large bowl and add coconut oil and rice syrup to coat
Spread out evenly on baking tray and bake for 20 – 30 minutes stirring half way
Remove once golden and crunchy
Place in an airtight container and store in the fridge
